Recently I was chatting with Valerie and Sarah about handmade fresh ricotta, so I decided to purchase fresh ricotta cheese from Di Palo, one of the best Italian purveyors in NYC instead of the usual convenient Polly-O stuff. The quality of the ricotta makes such a big difference in the lasagna! So long, Polly-O... I think I'll be sticking with Di Palo from now on! After. Lasagna after a trip in the oven.
